Most mornings for breakfast I have oats. Depending on if I get my act together the night before I will have overnight oats. Most of the time I am far to lazy to make them. There are thousands of recipes out there for overnight oats. In my opinion, they all taste amazing. I have tried many different variations and found one that me and my almost two year old love. She is a tough cookie when it comes to food.
My favorite way of making these oats is with peanut butter, because I have an obsession/addiction to peanut butter.
First things first, I start with a mason jar because they are super cute and very affordable. Also, if you are in a hurry you can take it with you, just be careful not to drop it on the ground, I have done this and it is very sad.
After you pick a container for your overnight oats, grab some oats, whatever brand you like. I use the Great Value brand because all oats kind of taste the same to me. I use depending on the day, 1/4 or 1/3 cups of oats.
Next I add a spoonful of Chia seeds. Again, whatever brand you like. These help give you extra protein.
Then, I put a couple shakes of the cinnamon powder in. Not everyone is going to like cinnamon with peanut butter, but it tastes amazing. I was super surprised that I liked it.
Next, I add peanut butter. I will either use powdered peanut butter or regular, depending on what I have on hand. I just use a tablespoon of peanut butter, I have to control myself because if I’m not careful the whole container will be put in there.
After peanut butter comes the yogurt. I love adding Vanilla Greek yogurt to my oats because it makes it smooth and creamy. It gives it a great flavor and added protein.
Lastly, I add Coconut milk. It adds a great taste and makes it creamy. Whatever kind of milk you like can go in there, I just like coconut milk the best.
All that’s left to do is stir or shake it up ( only if the lids on 😉 ). Put it in the fridge overnight and then in the morning grab it out of the fridge, add whatever toppings you like. I love adding granola and an extra spoonful of peanut butter, because I have no will power.
