Hello everyone! How’s your Saturday? We have been busy the past couple days finally getting our rooms/ closet cleaned and organized. Only took us about a month, #winning.
So the other day I decided to try something new with sweet potatoes. Normally I buy a couple, cut them up and roast them. I’d been seeing recipes for zucchini fritters and sweet potato fritters for awhile and wanted to try them out. So I gave it a shot and wow was I kind of surprised.
They don’t look pretty or anything like the ones you see on Pinterest, but they were delicious. Also my picky toddler loved them! I was so excited about that because she doesn’t like anything unless it’s Mac and cheese or chicken nuggets.
I’m not going to lie, I struggled at first with trying to figure out how to shred sweet potatoes. I felt very stupid and didn’t look up how to do so until I already started peeling them. So that is why they look odd, I peeled instead of shredded them. Oh well they still tasted good!
I added my ingredients and decided to improvise a little bit since I didn’t shred the sweet potato.
Alright here’s the recipe!
- 2 1/2 cup shredded sweet potato ( peeled if you struggle like me)
- 1 egg ( I used 2 since I peeled the sweet potato)
- Chives ( I didn’t have any)
- 1/3 cup flour ( I used wheat flour, you can use whatever flour you like)
- Salt and pepper ( however much you like)
- Coconut oil ( for cooking)
Now that you have your ingredients mix the sweet potato, egg, flour, chives and salt and pepper in a bowl.
Next grab a pan or skillet and put the heat to medium-high. Put about 3 tablespoons of coconut oil and let that heat up.
Once your oil is hot, form patties with your mixture. Then put them in your pan. Cook on each side for about 3 minutes, or longer if you want them more crispy.
When they were finished cooking I put parchment paper with paper towels down so it could absorb a little of the oil.
All that’s left to do is sit down and enjoy your fritters. We dipped ours in ranch, you can dip them in whatever you’d like.
I hope yours look prettier than mine, I plan on having chives next time I make them!
