Oh so sweet!

Hey there! How’s your week been? I feel like I have been busy all week but yet I have got nothing done. It’s crazy how time gets away from you. 

One thing I did this week was try out a new recipe. This is not my recipe, I found it on Pinterest ( this is the link for the recipe). It is so amazing I just knew I had to share it with you. 

So the other day I was going to make the only form of Shepherds pie that I will eat (I’m very picky). I was boiling up my sweet potatoes because they take forever, and about 15 minutes after I started them I realized my ground hamburger had gone bad. I was thinking “great I’m already boiling my sweet potatoes and I don’t have any more ground hamburger “. So we figured something else out for dinner and I was trying to decide what to do with soon to be mashed sweet potatoes and I found Sweet Potato Brownies. I am always down for trying healthy versions of my favorite treats. 

So here’s the recipe:

  • 1 1/2 cup mashed sweet potatoes 
  • 1 cup of peanut butter 
  • 3 tablespoons of cocoa powder 
  • 1 egg
  • 1/4 cup honey
  • Splash of vanilla
  • 1 teaspoon baking soda 
  • 1 teaspoon of cinnamon ( I didn’t measure mine and may have accidentally put too much in. It still tastes good though)
  • Dark chocolate chips ( I added this to the recipe because I love chocolate)

Mix it all together and put it in an 8×8 greased pan. 

Make sure your oven is preheated to 350 degrees and bake for 25 minutes.  

Seriously these brownies are the best. If you are sitting there thinking ” Ang that is absolutely disgusting I’m not putting sweet potatoes in brownies” you won’t be the only one. My hubby is not a fan of these type of treats either. However, he loved these brownies. I was amazed he even admitted to liking them. The best part is you can’t even taste them, they just serve as a base so you don’t need flour. I would also like to say my picky toddler loves them as well and tried to steal her daddies off his plate. 

I’m bummed I thought I took pics of the before and after but apparently I was too excited to eat them that I forgot.
