Hey everyone! How’s your week going so far? Today has been a long day for me, it’s raining out and the kids are driving me up a wall. But hey that’s motherhood right?
Anyways I thought I’d keep it light and refreshing and give y’all a delicious perfect for summer recipe. It’s not a secret that I love chia pudding. They are so filling, delicious and so good for you!
The benefits of chia seeds are amazing! They provide protein, omega 3s, antioxidants, fiber, and more. The tiny little seeds are so jam packed full of nutrients and goodness I just can’t get enough. My hubby even bought me a 5 lb container of them.

Here’s what you need:
- A glass jar or container that can be sealed
- 1 cup Milk or water (I used water for this one, usually I do half water half milk)
- 1/4 cup of chia seeds
- 1/2 lemon
- Lemon zest
- Frozen or fresh blueberries
- Honey or maple syrup
Mix it all up and keep it in the fridge for at least 30 min. The chia seeds will expand and make a gel like substance.
This treat is so refreshing and it’s just so good! It doesn’t have to be dessert, you can always eat it for breakfast to get that extra boost of energy!
