Happy Monday! How was your weekend? Mine was good, we took the kids to the water park and just hung out.
I have decided that I need to start eating healthy and working out again since I have taken the last couple of months off. I have just been feeling sluggish, gross and uncomfortable. So I put one of my favorite workout dvds in and worked out 💪.
I was at Walmart yesterday and came across a clearance item, and let me tell you. I am a bit obsessed with the clearance sections. I stop and look for like 5 min to make sure I didn’t miss anything. So yes, I am slightly crazy but that’s ok!
I found a red lentil pasta and I just knew I needed it. So I bought it and for lunch today I made the perfect meal.
This pasta is absolutely amazing. It cooks like normal, and has a little bit of a grittier texture. The only ingredient in this pasta is red lentil flour. Ahhhmazzzing!
I also went to Aldi yesterday because, why not? I bought a couple avocados since they were only $0.69. I also bought the Spinach and Feta Chicken Sausage.
I cooked up my pasta, mashed up the avocado and attempted to blend it with oil and minced garlic. I cooked the chicken sausage and cut it up. Then I added it all to my bowl. It was delicious and amazing, plus can we talk about how cheap it was? I get a bit excited for a cheap, healthy and delicious meal!
So here’s what you need:
- Avocado (I only used half cause I was the only one who ate it)
- Chicken sausage (or whatever kind of protein you like)
- Minced garlic
- Splash of oil
- Cayenne pepper ( optional)
