Happy Wednesday!
I’ve been pretty busy the last couple weeks with school, dance, soccer, new glasses and phones, babysitting, finding time for some “me” time and trying to keep up with house work and family time. It’s been interesting that’s for sure. Some days I feel like I can conquer the world, and other days I feel like I’m barely hanging on.
Today I decided to make a salad for lunch cause I’m trying to stay healthy. I am a food lover so it’s been a challenge. This salad was so good and extremely filling! I used the few ingredients I had since I haven’t gone grocery shopping (oops).
Aright lets take a look.
Ingredients:
- Lots of spinach
- Green pepper
- Sweet potatoes
- Ground pork
- Shredded cheese
- Salsa
- I forgot to add the avocado I had so add that if you got it!
- Any other veggies you like, fill up that bowl!
I started by pan frying my sweet potato for a few minutes. I then put them on a pan, added the ground pork and shredded cheese. I baked them for about 10-15 minutes with the oven preheated to 450.
Once that was done I added the sweet potato bites so my spinach and green pepper. I added a scoop of salsa and there was my quick and easy lunch.
