Happy Tuesday! I woke up believing it was Monday, turns out I was wrong. Oh well, things can only get better from here!
My kids woke up in such a mood. They both started whining and crying and it was barely 7:15 am. I was not ready for that! So I made my coffee while drinking hot lemon water, and started trying to figure out the problem.
My son always wakes up super hungry so I fixed him some breakfast, then my daughter made her breakfast request. Finally they finished up their many pieces of peanut butter honey toast, so I began making my breakfast.
I am very much a creature of habit. I stick to what I like and eat it every single day. Since we have been limiting what we buy, I’ve had to change up my breakfast just a bit. I always eat some kind of oatmeal.
This is my Berry Collagen Oatmeal recipe. I’ve been living off of this and I am loving it!
Here’s what you’ll need:
- Oats- I only use 1/4 cup at most.
- Frozen mixed berries
- Water or milk
- Peanut butter – I use only 1 tablespoon at most
- Vanilla Greek yogurt- I use a small spoonful

I start by putting the oatmeal and berries in a bowl and microwaving until berries aren’t frozen. Once that’s done I add my peanut butter, Greek yogurt, cinnamon, collagen vitamin and probiotic. I don’t like taking big pills so I break my collagen booster and put the powder in my oatmeal. It makes things much easier for me! I then mix it all up and then enjoy!
It is delicious and filling!
