Happy Wednesday! Wow it’s been a long week already. We have been really busy packing and moving into our new home. We moved in on Monday and have already had plumbing issues, luckily we got it fixed yesterday. Our house at the moment looks like a disaster, there is boxes and totes all over the place.
Anyways, before we moved I made my version of a taco salad. I didn’t have taco seasoning and I used whatever I had in my fridge and freezer. I have to say for just throwing stuff together it turned out really good.
The first thing I did was chose a meat. We only had ground pork so I browned that in a large pan. I added oregano, Italian seasoning, garlic powder, onion salt and a little paprika. Once that was all cooked I found a bag of frozen corn and sweet potatoes and added that in. We also had cut up zucchini so I threw that in as well. You could really add any veggies you like and it’d turn out great. I then added some already cooked quinoa to it.
Once all of the veggies were cooked I added a little taco sauce to the mix and let it cook for a few minutes.
The last thing I did was put the meat and veggie mix on a bed of spinach. It was so easy and quick to make. As a mom that’s the kind of meals I live for. It took only 15 minutes or so and tasted great. My picky toddler even seemed to like it ( it did take a bit for her to eat because she’s a silly girl who thinks it’s cool to eat for over an hour 🙄).
The final step is adding your favorite taco toppings! I only had avocados so I cut one up. It would be good with a tiny dollup ( is that the right spelling? I don’t think so but that’s ok!) of sour cream or plain Greek yogurt. You could also add shredded cheese ( I clearly need to do some grocery shopping).
- Ground meat ( pork, chicken, turkey or beef)
- Veggies ( any you’d like; I really love sweet potatoes and corn plus that’s all we had in the house)
- Quinoa ( takes about 20 minutes to cook but so delicious)
- Taco sauce ( optional)
- Salsa ( optional) ( I didn’t have this but it’d be tasty!)
- Spinach ( any leafy greens)
- Avocado ( toppings)
- Sour cream or plain Greek yogurt ( toppings)
- Shredded cheese (toppings)
- Any other topping or taco ingredient you love!
It is so delicious, easy and quick to make plus keeps you full!
