Happy Monday! How was your weekend? Today is the beginning of week 5 of my healthy journey. I have managed to only have a few cheat meals (which sometimes it’s necessary, you gotta keep it realistic when it comes to dieting) and I’ve only missed 2 workouts in the last 4 weeks. I haven’t noticed to much of a difference but I am extremely proud of how well I’ve done. There is always temptation, that’s when you have to show discipline.
Anyways, I have been searching for new meals to eat and I think I have found my new favorite. I wrote a post not that long ago on something very similar but I added some new ingredients so I thought I’d share.
This is a very healthy and filling burrito/taco bowl. Here’s what you need:
- Brown rice or quinoa ( I used brown rice)
- Ground meat (turkey, chicken, beef or pork. For this recipe I used ground pork because I had it on hand)
- Black beans (drained and rinsed)
- Corn
- Salsa
- Spinach or lettuce
- Avocado
- Cheese
- Garlic seasoning
- Onion powder
- Italian seasoning
- Taco sauce ( I didn’t have any so I added a little more salsa)
First off, ground the meat and and your garlic, onion and Italian seasoning. In a separate pot boil some water and cook your rice. Once your meat is browned, add your black beans and corn. Once that is all cooked add salsa to your pan and cook for a little bit longer.
In a bowl or on a plate start to dish up your meat and rice. Then add however much spinach and cheese you’d like. Once that’s done add your avocado or sour cream( plain Greek yogurt is the same as sour cream just a bit healthier).
All that’s left is to stir it all together and enjoy!
